Chicken Fried Rice (Khao Phad Kai)


Chicken fried rice is always a popular choice at mealtimes, both with kids and adults. But most homemade versions of fried rice don't taste nearly as good as those made in a restaurant. If you've found this to be the case, what you may be lacking are a few fried rice tips (included in this recipe). Make this dish as spicy or mild as you like, according to how much chili you want to add (it can also be omitted, especially if you're feeding kids). A super dish to eat on its own, this chicken fried rice recipe also makes a good basic accompaniment to other Thai/Asian recipes. Enjoy!

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: SERVES 2 as a Main Entree

 

Ingredients:

  • 4 cups cooked rice, preferably several days old (see recipe)
  • 1/2 to 1 cup cooked chicken or turkey, OR fresh (uncooked) chicken, cut into very small pieces
  • 1/4 cup chicken stock
  • 3 cloves garlic, minced
  • 1 minced green or red chili, OR 1/4 to 1/2 tsp. dried crushed chili
  • 2 Tbsp. fish sauce (plus more to taste)
  • 3 Tbsp. vegetable oil
  • 1/2 cup frozen peas
  • 1 egg
  • 3 spring (green) onions, finely sliced
  • 1/2 cup fresh basil OR coriander/cilantro

Preparation:

Tip: it's best to use "old" rice for this recipe. If using newly-cooked rice, put it in a large bowl and let it sit uncovered in the refrigerator for a few hours to dry it out.
  1. First, prepare cold rice by drizzling over 1 Tbsp. of the oil. Use your fingers to mix the oil in with the rice and separate the rice grains, removing any clumps.
  2. Place remaining oil in a large frying pan or wok over medium-high heat. Add garlic and chili. Stir-fry until fragrant (30 seconds to 1 minute).
  3. Add chicken plus 2 Tbsp. stock. Stir-fry enough to thoroughly warm the meat if cooked. If raw, stir fry until meat is well cooked (3-5 minutes). Add remaining stock, as necessary, to prevent the pan from becoming dry and to keep ingredients sizzling.
  4. Using a wooden spoon or spatula, push ingredients aside and crack the egg into the middle of the wok/pan. Stir quickly to cook and break up the egg (like making scrambled eggs).
  5. When egg is cooked, add the rice plus fish sauce. Stir fry, keeping the heat medium-high. Do not add any more stock/liquid at this point, or your rice will become soggy. You want it hot and dry and light-textured.
  6. Add frozen peas and continue to stir-fry another 2-3 minutes, or until you can hear the rice "popping". Cooking Tip: If you find the rice is sticking, push the rice aside and add a little more oil to the bottom of the pan - this will make the rice "shine", like restaurant quality fried rice.
  7. Do a taste-test for saltiness. If not salty or flavorful enough, add more fish sauce. If too salty for your taste (this will depend on the stock you used), add up to 1 Tbsp. fresh-squeezed lime juice.
  8. Sprinkle with spring onion and basil or coriander, and serve piping hot from the wok/pan. Thai chili sauce can be served on the side. Enjoy!

Saffron Rice Recipe

This easy recipe for saffron rice hails from the south of Thailand, where it is often eaten with roast chicken. Saffron rice makes dinner extra special, and is nearly as easy to make as regular rice. You needn't own a rice cooker to make this recipe - it's boiled in a pot on the stove, but tastes very similar to steamed rice. And unlike most saffron rice recipes, this one is fat-free. Note: Because saffron is so expensive, I only use a little bit, then enhance the color by adding turmeric - a spice which also has incredible health benefits (in Thailand, turmeric is known as 'poor man's saffron'). Enjoy!

Cook Time: 20 minutes

Total Time: 22 minutes

Yield: SERVES 4 as a Side Dish

 

Ingredients:

  • SERVES 4
  • 2 cups white Thai jasmine-scented rice, OR substitute white basmati rice (Note: brown rice is not successful with this recipe)
  • 3 1/2 cups good-tasting chicken or vegetable stock
  • 1.5 to 2 Tbsp. fish sauce, OR 1/4 to 1/2 tsp. salt if vegetarian/vegan (to taste)
  • 1/2 tsp. turmeric
  • 1/2 tsp. saffron threads
  • 1 clove garlic, minced
  • 1/4 to 1/2 tsp. dried crushed chili (from the spice aisle)
  • squeeze of lemon juice

Preparation:


  1. Pour stock into a medium-size pot (you will also need a tight-fitting lid). Place pot on the stove over high heat.
  2. While stock is coming to a boil, add the turmeric, saffron, garlic, chili, and a squeeze of lemon juice. Stir well.
  3. Add the rice, plus 1.5 Tbsp. fish sauce (or 1/4 tsp. salt) and stir. Bring to a boil, then reduce heat to low (just above minimum) and cover tightly with a lid. Cook 12-15 minutes, or until liquid has been absorbed by the rice. Tip: Insert a fork or knife straight down into the pot and push the rice aside. If you see liquid, it still needs more time to cook.
  4. When most of the liquid is gone, turn off the heat and place lid on tight. Allow the pot is remain on the burner another 5-10 minutes, or until you're ready to eat. The residual heat inside the pot will finish steaming the rice. The rice will stay warm in this way for 1 hour or more (great if you're having guests!).
  5. Before serving, remove the lid and fluff rice with chopsticks or a fork (some of the chili may have risen to the surface - just stir it back into the rice). Taste-test for salt, adding 1/2 Tbsp. more fish sauce or a little more salt if needed (how much will depend on the saltiness of your stock). If too salty, add another squeeze of lemon juice. Thai Coconut Rice

Coconut rice makes a terrific accompaniment to many Thai and Indian dishes, but it's equally wonderful with many Western-style entrees. Quick and easy to make, this coconut rice recipe will come in handy for those times when you want to make dinner extra special without going to a lot of extra work. ENJOY!
 
Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: SERVES 4

 

Ingredients:

  • 2 cups Thai jasmine-scented white rice (for brown coconut rice, see link below)
  • 2 cups good-quality coconut milk
  • 1 3/4 cups water
  • 2 heaping Tbsp. dry shredded unsweetened coconut (baking type)
  • 1/2 tsp. salt
  • 1/2 tsp. coconut oil, OR vegetable oil
  • Optional: 1-2 Tbsp. toasted coconut for garnish (see instructions below recipe)

Preparation:

  1. Rub oil over the bottom of a deep-sided pot. You will also need a tight-fitting lid.
  2. Place rice, coconut milk, water, shredded coconut, and salt in the pot and set over medium-high to high heat. Stir occasionally to keep rice from sticking to the bottom of the pot and burning.
  3. Once the coconut-water has begun to gently bubble, stop stirring and reduce heat to low (just above minimum). Cover tightly with a lid and let simmer 15-20 minutes, or until most of the liquid has been absorbed by the rice. To check, pull rice aside with a fork. If most of the coconut milk-water is gone, go on to the next step.
  4. Replace the lid and turn off the heat, but leave the covered pot on the burner to steam another 5-10 minutes, or until you're ready to eat. Tip: Your Coconut Rice will stay warm this way for up to 1 hour or more, great for when you're expecting company!
  5. When ready to serve, remove the lid and fluff rice with a fork or chopsticks. Taste-test the rice for salt, adding a little more if needed. Serve right out of the pot, or transfer to a serving bowl. This rice is excellent served with a variety of both Thai and Indian dishes, such as curries or seafood recipes. If desired, top your rice with a sprinkling of toasted coconut and ENJOY!

ผัดขิงไก่ (Gai Pad King) - Stir Fried Chicken with Ginger and Assorted Vegetables


การเตรียมเครื่องปรุง
1.เนื้อไก่หั่นชิ้นบางๆ 1/2 กิโลกรัม
2.น้ำมันพืช 1~2 ทัพพี
3.ขิงซอย 1~2 ขีด
4.เห็ดหูหนูหั่นชิ้น 1~2 ขีด
5.น้ำปลา 1 ช้อนโต๊ะ
6.ผงชูรส 1 ช้อนชา
7.ซอลหอยนางรม 1 ทัพพี

วิธีการทำ
1.ใสน้ำมันพืชทิ้งไว้ให้ร้อน
2..ใสไก่ผัดให้สุก
3.ใสน้ำปลาและผงชูรสผัดให้เข้ากัน
4.ใสขิงซอยและเห็ดหูหนูผัดให้เข้ากัน
5.ใส่น้ำมันหอยแล้วผัดให้เข้ากัน แค่นี้ท่านก็จะได้ผักขิงไก่สุดแสนอร่อยแล้ว สนนราคาอยู่ที่จาน
ละ 25~30 บาท ถ้ารสชาดยังไม่เข็มข้นเพิ่มน้ำมันหอยก็ได้

การเตรียมเครื่องปรุง
1.น้ำมันพืช 1 ทัพพี
2.หมูบด 1/2 กิโลกรัม
3.กระเทียมเจียว 1/2 ช้อนโต๊ะ
4.กระหล่ำปลีหั่นชิ้น 2 ขีด,เห็ดหูหนูหั่นชิ้น 2 ขีด,แครอดหั่นชิ้น 2 ขีด
5.น้ำมันหอย 1 ทัพพี
6.ซอลหอยนางรม 1 ทัพพี
7.น้ำปลา 1 ช้อนโต๊ะ,น้ำตาลทราย 1 ช้อนโต๊ะ, ผงชูรส 1 ช้อนชา

วิธีการปรุง
1.ตั้งกระทะใสน้ำมันพืชรอให้ร้อน
2.ใส่กระเทียมเจียว เจียวให้หอม
3.ใสหมูบดผัดให้สุก
4.ใสน้ำมันหอยซอลหอยนางรม,น้ำปลา น้ำตาล ผงชูรส ผัดให้เข้ากัน
5.ใส่กระหล่ำ เห็ดหูหนู แครอด ผัดให้เข้ากัน ถ้าชอบรสชาดไหนก็เพิ่มเข้าไปได้เลย

Bul Dak - Hot & Spicy Chicken - 불닭


Buldak is a spicy chicken dish that is becoming very popular amongst the younger generation of Koreans everywhere. Its popularity has been attributed to both its unique flavors and spiciness. Keep in mind, the term bul means fire in Korean and dak is chicken, so it can get quite spicy in taste.
Many restaurants that specialize in buldak have been created due to the growing popularity as this dish is considered fairly new. Most restaurants that serve this dish offer various levels of spiciness that one can choose from and there are usually fresh vegetables served with this dish to blend in the taste. Cubed-cut sweet radishes along with salad and onions are usually popular.
An order of buldak can be served on a platter of bite-sized morsels of chicken breasts or sometimes in combinations of wings or drumsticks. While the flavor and degree of hotness differs a little from place to place, it is marinated with a hot & sweet sauce, grilled over an open fire, and then served over a sizzling skillet, topped with herbs. It’s usually enjoyed as an appetizer while drinking a cold beer or soju at popular bars or restaurants.

Recipe Ingredients: Chicken Preparation
  • 6 chicken drum sticks (de-boned) or 2 chicken breasts
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp traditional corn syrup (substitution honey)
  • 2 tbsp cheong ju (clear rice wine similar to Japanese sake)
  • 1 stalk green onion
  • Black pepper ground to taste
  • Olive oil
  • Roasted sesame seeds (optional)

Recipe Ingredients: Marinating Sauce
  • 3 tbsp kochukaru (red chili pepper flakes)
  • 2 jalapenos
  • ½ cup Korean pear (substitution Asian pear)
  • ¼ onion
  • 3 cloves garlic
  • 2 tbsp soy sauce
  • 1 tsp spicy yellow mustard
  • 1 tbsp sesame oil
  • 1 tbsp sugar
  • 1 tbsp mul yut (substitution honey)
  • 2 tbsp soy sauce
  • 1 tbsp sugar

Cooking Directions
  1. Rinse chicken drum sticks in cold water and de-done meat with a sharp knife. Cut into 4 even pieces per leg drum -OR- rinse chicken breasts in cold water and cut into bite-size pieces
  2. In a large bowl, mix chicken with soy sauce, sugar, mul yut (substitution honey), cheong ju and ground pepper.
  3. Marinate in refrigerator for 30 minutes.
  4. Puree all marinating sauce ingredients together in a blender. Once completed, leave aside for later use.
  5. On a non-stick frying pan or skillet, cook prepared chicken over medium heat until meat is just short of desired completion.
  6. Take out chicken only and leave excess ingredients in frying pan or skillet.
  7. In a large bowl, thoroughly mix chicken with blended sauce from steps 2 & 3.
  8. In the same frying pan or skillet, add olive oil to taste and cook for an additional 3-4 minutes in medium high heat.
  9. Serve hot on plate.

Bo Ssam - Steamed Pork Wrapped in Leaves - 보쌈


Bossam is a type of ssam in Korean cuisine in which steamed pork is wrapped in a leaf vegetable such as red lettuce or sesame leaf, often accompanied by a condiment known as ssamjang. It is usually topped with raw or cooked garlic, onion, pepper, or, most commonly, sweet kimchi. Bossam is also preferred to be eaten with saeujeot (pickled fermented shrimp).
Bossam is a popular dish in Korea, and can also be served as an anju (side dish consumed while drinking soju).

Sam Gyup Sal - Grilled Pork Strips - 삼겹살

Samgyupsal is another popular Korean meat dish. It consists of thick pork strips, served in the same fashion as galbi but there is no marinating involved.  Sometimes it is cooked on a grill with kimchi, mushrooms, garlic, onions and consumed altogether. This dish is usually served with a side of lettuce, spinach, or other leafy vegetable(s), which is used to wrap a slice of cooked samgyupsal. A dab of ssamjang (usually made of kochujang or dwenjang), kimchi, or other side dishes are also added and then eaten as a whole.

So Gal Bi - Grilled Beef Short Ribs - 소갈비

Galbi is a very popular Korean meat dish made from beef short ribs. The ribs are marinated in a sauce made from Korean pear juice, rice wine, soy sauce, garlic, sesame seed oil and sugar. Most recipes contain these basic ingredients but many variations exists from sweet to spicier marinades.
The meat itself is often cut in the L.A. rib style, which is basically a rack of ribs cut in thin slices across the bones. This makes eating galbi easier with chopsticks or with fingers. Galbi is usually available in most Korean restaurants but it is generally served in venues that specialize in galbi and the meat is cooked on an in-table BBQ.
This dish is usually served with a side of lettuce, spinach, or other leafy vegetable, which is used to wrap a slice of cooked meat, often times along with a dab of ssamjang, kimchi, or other side dishes, and then eaten as a whole.

Recipe Ingredients
  • 16 ribs
  • 1 cup soy sauce
  • ¾ cup sugar
  • ½ cup water
  • 1 Asian pear, chopped (or ½ Korean pear)
  • 1 onion, chopped
  • 2 tbsp minced garlic
  • 4 tbsp sesame oil
  • 1 tbsp ground pepper
  • 1 tbsp juice of ginger
Cooking Directions
  1. Wash meat. Rarely but sometimes you can find tiny bone scraps stick to the meat. Soak in water for 1 hour, drain.
  2. In a food processor, add chopped onion and pear, purée finely. Pour out to a large bowl, add remaining ingredients and stir.
  3. Marinate beef for 8-10 hours or overnight for optimal taste. They cook fairly fast, 2-3 minutes on one side.
  4. Traditionally, it is grilled with a wood charcoal but certainly you can grill on a gas stove or outdoor grill.

Bul gogi - Grilled Marinated Beef - 불고기

Bulgogi is one of Korea's most popular beef dishes. It is made from thinly sliced sirloin or another prime cut of beef (rib eye) and it is usually marinated in a mixture of soy sauce, sesame oil, black pepper, garlic, onions, ginger, wine and sugar. It’s marinated for two to four hours to enhance the flavor and its tenderization.
Bulgogi is traditionally grilled but broiling or pan-cooking is common as well. Whole cloves of garlic, sliced onions, and chopped green peppers are often grilled or cooked at the same time. It is often served to non-Koreans as a first taste of Korean cuisine.
This dish is usually served with a side of lettuce, spinach, or other leafy vegetable, which is used to wrap a slice of cooked meat, often times along with a dab of ssamjang, kimchi, or other side dishes, and then eaten as a whole.

Recipe Ingredients
  • 1 lb thinly sliced beef (sirloin or rib eye)
  • 5 tbsp sugar
  • ½ cup soy sauce
  • 2 buds finely chopped garlic (can be crushed but remove buds before serving)
  • ¼ tsp salt
  • 5 tbsp Mirin (sweet sake, optional)
  • 2 tbsp sesame oil
  • 2 tbsp toasted sesame seeds
  • 1 cup split green onions
  • 2 cups thinly sliced carrots (optional)
Cooking Directions
  1. Mix all ingredients except carrots. Marinate in refrigerator for at least 2 hours.
  2. Cook over medium high heat until meat is just short of desired completion.
  3. Add carrots and cook for an additional 3 minutes.
  4. Serve with rice.

เป็นอีกหนึ่งวงร็อกที่วัดความสามารถฝีมือบนถนนดนตรีสายร็อกผ่านเวทีประกวดมาแล้วมากมาย  เรียกได้ว่าประสบการณ์ดนตรีไม่เป็นรอง  ซึ่งตอนนี้พวกเขาวง “แจสมิน” ศิลปินน้องใหม่จากสังกัดอาร์เอสฯ ที่ประกอบด้วย “แจสมิน (ร้องนำ) ,“แอ๊พ (มือเบส) , ต้ำ (มือกีต้าร์) และ “เนม (มือกลอง) และวันนี้พวกเขาทั้ง 4 พร้อมที่จะนำประสบการณ์ตลอดที่ผ่านมาลงในงานเพลงของตัวเอง  เพื่อให้แฟนเพลงชาวร็อกได้ลองฟังกัน กับซิงเกิ้ลแรก “ไม่ไหวก็ต้องทำ” ส่วนจะร็อกจัดจ้านขนาดไหนนั้นไปฟังจากสาว “แจสมิน” (ร้องนำ) เล่ากันเลย
              “สำหรับพวกเราทั้ง 4 คนก็เป็นเด็กต่างจังหวัด ที่มีใจรักชื่นชอบดนตรีแนวร็อกเหมือนกัน  เป็นตัวแทนวงของโรงเรียนหาประสบการณ์ทางดนตรีไปกับเวทีประกวด  และหวังว่าจะเป็นสิ่งที่จะทำให้ความฝันของพวกเราที่จะมีงานเพลงของตัวเองนั้นเป็นจริง (ยิ้ม) เรียกได้ว่าใช้เวลานานในการเก็บเกี่ยวประสบการณ์  พอมาถึงตอนนี้พวกเราก็รู้สึกดีใจค่ะ  ที่ผู้ใหญ่ทางอาร์เอสฯ ให้โอกาสพวกเราน้องใหม่ได้มาทำงานเพลงที่เรารักและถนัดกับแนวร็อก  และเปิดตัวซิงเกิ้ลแรกด้วยเพลง “ไม่ไหวก็ต้องทำ” ก็เป็นเพลงจังหวะโยกได้ เนื้อหาค่อนข้างแรงกับคาแร็คเตอร์ของผู้หญิงที่เข้มแข็ง  ด้วยประโยคที่ว่า       “ไม่ไหวก็ต้องทำ” อารมณ์แนวเสียใจแต่ก็ต้องอดทนยอมรับกับความไม่สมหวังในความรักให้ได้  ซึ่งเพลงนี้สำหรับตัว “แจสมิน” ตอนเข้าห้องอัดร้องยากเพราะตรงจังหวะการหายใจของท่อนฮุค ต้องร้องให้กระชับเพื่อให้ลงจังหวะ ส่วนในเรื่องของลายดนตรีพี่ ๆ เขาก็ต้องซ้อมกันหนักก่อนเข้าห้องอัด  อยากให้ดนตรีกระชากอารมณ์ไปกับเนื้อหา ซึ่งก็ได้พี่ “ต่อ” (ซิลลี่ ฟูลล์) มาช่วยในลายแนวดนตรีค่ะ  ซึ่งก็อยากให้เพื่อน ๆ เป็นกำลังใจให้กับพวกเรา “แจสมิน”  น้องใหม่ด้วยนะค่ะ  ลองฟังเพลงกันดู  ขอบคุณค่ะ”

Stir fried eggplant with fermented soybean and minced pork (Ma-keua Yaao Pad Tao Jieow Moo Sap)

Stir fried eggplant with fermented soybean and minced pork (Ma-keua Yaao Pad Tao Jieow Moo Sap) is one of the rice side dishes that is popular for many Thai people to eat. Because the ingredients are easy to find, it is simple to make and it still tastes delicious. Thai Eggplant is commonly known as white eggplant. Even so, you will find that there are so many colors of eggplant including light green, dark purple, white, or dark purple mixed with white, etc. Eggplant has a lot of nutrition. Thai people often use it to make many dishes such as eggplant salad (Yum Ma-keua Yaao), pound eggplant (Tum Ma-keua), etc.

Ingredients
  • 2 eggplants, can use either green or purple eggplant
  • 150 grams (5 ounces) minced pork or minced chicken
  • 2-3 bunches of Thai sweet basil
  • 3-5 Thai fresh chili (Phrik Khee Nuu), take the stems off (depends on how spicy you like)
  • 2 cloves garlic, peeled
  • 1 Tbsp fermented soybean
  • 1 Tbsp soy sauce
  • ½ Tbsp fish sauce
  • 2 tsp sugar
  • 2 Tbsp vegetable oil
  • A little bit of salt
  • ¼ cup water

How to do…
1. Rinse the basil and the eggplants with water thoroughly. Drain the basil and pluck the leaves to set aside. Cut off the eggplants ends. Then chop the eggplants into an oblique shape about 1.5-2 inches thick (or cut in half lengthwise first and then slice crosswise into about 1 inch sized pieces each). Soak the sliced eggplant in water.  Add a slight pinch of salt into it, this will help the eggplants from turning dark.
2. Pound Thai fresh chili and garlic together just enough to be coarse, set aside.
3. Set the pan on medium heat. Add vegetable oil into the pan. When the pan is hot, put the pounded garlic and chili to fry until fragrant and then add the minced pork to fry until it is done. Then add the soaked eggplants into it (drain before putting it in).
4. Season with fermented soybean, soy sauce, fish sauce and sugar. Add ¼ cup water, stir the ingredients well together. Then put the lid on to cover the pan. Wait for the eggplants to cook for about 4-5 minutes and then open the lid. Stir again. Last, add the basil leaves. Fry until the basil leaves get soft. Turn off the heat, lift the pan off the heat and put the stir fry on the plate. (To stir fried the eggplant like this some places like to cook the sliced eggplants in hot water about 2-3 minutes prior to frying. When it is time to fry this will make the eggplants soft and cook quickly).

Ka-nom Tao Suan

Tao Suan is the name of a Thai dessert that originally came from China. It is made of boiled soybeans that have the shell removed and are then stirred together with flour paste and sugar. Then you pour the coconut milk on top. It has sweet, salty and nutty taste mixed together.

Ingredients
  • ½ cup split mung beans, or peeled mung beans (some people call soybean)
  • ½ cup concentrated coconut cream (this is the thick cream on the top of canned coconut milk)
  • 6-7 Tbsp sugar
  • 1 Tbsp tapioca flour or corn starch
  • ¼ tsp salt
  • ½ tsp rice flour
  • 2 cups water
How to do…
1. Wash the split mung beans with water thoroughly. And leave them to soak in the water for about 2-3 hours. When the time is over the beans will bloom all over the bowl. Then put the beans in a sieve and let the water drain.
2. Wrap the drained and split mung beans with a thin white cloth (cheesecloth is good) and put it in the steamer. Steam until the beans are done (it usually takes about 20 minutes).
3. While waiting for the beans to be cooked, it’s time to make the coconut milk for topping. Start by mixing the concentrated coconut cream with salt and rice flour in a pot first. Then put the pot over the low heat. Stir back and forth for about 1-2 minutes until the flour is cooked (careful not to boil). Turn off the heat and set it aside.
4. When the beans are cooked then pour them into a bowl. Shake the bowl lightly to make sure the beans won’t stay in a lump. Set aside.
5. Add 2 cups of water into a pot and put the pot over medium heat. Then add sugar, stir until all the sugar is melted (if anyone likes it sweet, add more sugar as you like).
6. Mix the tapioca flour with a little bit of water. Stir until the flour dissolves and does not stick together (putting tapioca flour into hot water directly is strictly prohibited, it will make the flour stick and clump together). When the pot starts to boil, then pour the flour mixture into the pot gradually while quickly stirring at the same time. Stir until it gets shiny and thick and then add the steamed mung beans. Stir until the beans are spread evenly in the pot then turn off the heat.
7. Scoop Tao Suan into a bowl. Put a little bit of coconut milk on top. Serve immediately, either hot or cold.

Tip: Do not skip the steps by adding the steamed mung beans into the pot before adding the tapioca flour. Because it will make the water get cloudy. The beans also will absorb all the water and make the beans bloom more. And when Tao Suan cools down could make the tapioca flour revert to the original form.

ขนมเต้าส่วน

เต้าส่วน เป็นชื่อของหวานชนิดหนึ่งของไทยชนิดหนึ่งที่ได้รับเอาวัฒนธรรมมาจากชนชาติจีน ทำด้วยแป้งเปียกกวนกับถั่วเขียวที่เอาเปลือกออก, ต้มกับน้ำตาล แล้วราดน้ำกะทิ จะมีรสชาติที่ออกหวาน เค็มและมันปนกัน

ส่วนผสม
  • ถั่วเขียวซีก หรือถั่วเขียวกระเทาะเปลือก (บางคนก็เรียกว่าถั่วเหลือง) ½ ถ้วยตวง
  • หัวกะทิ 1/2 ถ้วยตวง
  • น้ำตาลทราย 6-7 ช้อนโต๊ะ
  • แป้งมัน หรือแป้งข้าวโพด 1 ช้อนโต๊ะ
  • เกลือป่น 1/4 ช้อนชา
  • แป้งข้าวเจ้า 1/2 ช้อนชา
  • น้ำเปล่า 2 ถ้วยตวง

วิธีทำ
1. นำถั่วเขียวซีกมาล้างน้ำทำความสะอาด แล้วแช่น้ำทิ้งไว้ 2-3 ชั่วโมง เวลาผ่านไปจะได้ถั่วที่บานเต็มชาม จากนั้นจึงนำถั่วไปใส่ในตะแกรงและสะเด็ดน้ำไว้
2. นำถั่วเขียวซีกที่สะเด็ดน้ำแล้วไปห่อด้วยผ้าขาวบางและนำไปนึ่งในหม้อนึ่งจนสุก (ใช้เวลาประมาณ 20 นาที)
3. ระหว่างที่รอให้ถั่วที่นึ่งสุกอยู่นั้น ก็มาทำน้ำกะทิสำหรับราดหน้า โดยนำหัวกะทิไปผสมกับเกลือป่นและแป้งข้าวเจ้าในหม้อ ยกหม้อขึ้นตั้งไฟอ่อนๆ หมั่นคนไปมาซักพักประมาณ 1-2นาทีจนแป้งสุก (ระวังอย่าให้เดือด) จึงปิดไฟ และพักไว้
4. เมื่อถั่วนึ่งสุกแล้วจึงยกลงเทใส่ชาม จับชามเขย่าไปมาเบาๆ ให้ถั่วไม่จับเป็นก้อน พักไว้
5. นำน้ำเปล่า 2 ถ้วยตวงใส่หม้อและยกขึ้นตั้งไฟร้อนปานกลาง จากนั้นจึงใส่น้ำตาลทรายลงไป คนจนละลายดี (ถ้าใครชอบหวานมากก็เพิ่มน้ำตาลเองตามใจชอบ)
6. นำแป้งมันไปผสมกับน้ำเปล่าเล็กน้อย คนจนแป้งละลายและไม่จับตัวกันเป็นก้อน (ห้ามใส่แป้งมันในน้ำร้อนโดยตรงเด็ดขาด เพราะจะทำให้แป้งจับตัวกันเป็นก้อนๆ) พอหม้อน้ำตาลเริ่มเดือดจึงค่อยๆ เทแป้งมันที่ผสมน้ำไว้ลงไปทีละน้อย ในขณะเดียวกันก็คนเร็วๆให้เข้ากัน จนแป้งสุกใสและข้นเหนียว จึงใส่ถั่วเขียวนึ่งที่เตรียมไว้ลงไป คนให้ถั่วกระจายทั่ว จึงปิดไฟ
7. ตักเต้าส่วนใส่ถ้วย ราดหน้าด้วยน้ำกะทิเล็กน้อย พร้อมเสริ์ฟได้ทันทีทั้งร้อนและเย็น

เคล็ดลับ : อย่าข้ามขั้นตอนโดยใส่ถั่วก่อนแป้งมัน เพราะจะทำให้น้ำขุ่น และถั่วจะดูดน้ำทำให้บานเพิ่มขึ้นอีกไปอีก และเมื่อเต้าส่วนเย็นตัวลงอาจทำให้แป้งมันคืนตัวได้

มะเขือยาวผัดเต้าเจี้ยวหมูสับ

มะเขือยาวผัดเต้าเจี้ยวหมูสับ เป็นกับข้าวจานหนึ่งที่คนไทยนิยมรับประทานกันมาก เนื่องจากวัตถุดิบหาได้ง่าย วิธีการทำก็ไม่ยุ่งยาก และยังมีรสชาติที่อร่อย  มะเขือยาวมีชื่อพื้นบ้านว่า มะเขือขาว ปัจจุบันมะเขือยาวมีหลายหลากสี ได้แก่ สีเขียวอ่อน สีม่วงคล้ำ สีขาว หรือสีม่วงปนขาว เป็นต้น มะเขือยาวมีคุณค่าทางโภชนาการหลายอย่าง คนไทยนิยมนำมาทำเป็นอาหารหลายชนิด เช่น  ยำมะเขืออยาว , ตำมะเขือ เป็นต้น

 ส่วนผสม
  • มะเขือยาว 2 ลูก,  จะใช้แบบสีเขียวหรือสีม่วงก็ได้
  • หมูสับ หรือไก่สับ 150 กรัม
  • โหระพา 2-3 ช่อ
  • พริกขี้หนู 3-5 เม็ด, เด็ดขั้ว  (แล้วแต่ชอบเผ็ดมากน้อย)
  • กระเทียม 2 กลีบ, ปอกเปลือก
  • เต้าเจี้ยว 1 ช้อนโต๊ะ
  • ซีอิ้วขาว 1 ช้อนโต๊ะ
  • น้ำปลา ½ ช้อนโต๊ะ
  • น้ำตาล 2 ช้อนชา
  • น้ำมันพืช 2 ช้อนโต๊ะ
  • เกลือป่นนิดหน่อย
  • น้ำเปล่า ¼ ถ้วยตวง

 วิธีทำ
1. นำโหระพาและนำมะเขือยาวไปล้างน้ำให้สะอาด  นำโหระพามาสะเด็ดน้ำแล้วเด็ดเป็นใบๆ พักไว้ ส่วนมะเขือยาวนำมาตัดขั้วทิ้ง แล้วนำไปหั่นแฉลบหนาประมาณ 1.5-2 นิ้ว (หรือจะผ่าตามยาวตลอด  แล้วหั่นเป็นชิ้นตามขวางขนาดชิ้นละ 1 นิ้วเศษก็ได้)  นำมะเขือที่หั่นแล้วไปแช่น้ำให้ท่วม ใส่เกลือป่นลงไปเล็กน้อย จะทำให้มะเขือยาวไม่คล้ำ2. นำพริกขี้หนูกับกระเทียมมาตำรวมกันพอหยาบ พักไว้
3. นำกระทะไปตั้งบนไฟกลาง  ใส่น้ำมันพืชลงไปในกระทะ  พอกระทะเริ่มร้อนให้ใส่กระเทียมและพริกที่ตำไว้ลงไปผัด ผัดพอหอม  จากนั้นใส่หมูสับลงไปผัดพอสุก  จึงใส่มะเขือยาวที่แช่ในน้ำเกลือลงไป (สะเด็ดน้ำก่อนใส่)
4. ปรุงรสด้วยเต้าเจี้ยว, ซีอิ้วขาว, น้ำปลา และน้ำตาล  เติมน้ำเปล่า ¼  ถ้วยตวงลงไป  ผัดให้เครื่องปรุงเข้ากัน  จากนั้นเอาฝาหม้อหรืออะไรก็ได้ปิดกระทะไว้  รอให้มะเขือสุกประมาณ 4-5 นาที จากนั้นจึงเปิดฝาหม้อออก ผัดต่อให้เข้ากัน สุดท้ายจึงใส่ใบโหระพาที่เด็ดไว้ลงไป  ผัดให้ใบโหระพาอ่อนตัว จึงปิดไฟ ยกลงและตักใส่จานเสริ์ฟ (การผัดมะเขือยาวนี้ บางที่ก็นิยมนำเอามะเขือยาวที่หั่นไว้แล้วไปต้มในน้ำร้อนประมาณ 2-3นาทีก่อน  เมื่อถึงเวลานำมาผัด  จะทำให้มะเขือยาวนิ่มและสุกเร็วขึ้น)

เมี่ยงปลาทู (Meiy Pha Tu)


การเตรียมก่อนการปรุง
1.ปลาทูขนาดพอเหมาะ 4~5 ตัว
2.ผักกาดหอม 1/2 กิโลกรัม
3.น้ำมันพืช 1 ขวดกลาง
4.เส้นใหญ่ก๋วยเตี๋ยว 1/2 กิโลกรัม
5.ถั่วลิสงคั่วแล้ว 1 ช้อนโต๊ะ
6.น้ำตาลปี๊บ 1 ช้อนโต๊ะ
7.น้ำปลา 3~4 ช้อนโต๊ะ
8.ผงชูรส 1ช้อนชา
9.พริกขี้หนูสด 5~6 เม็ดพร้อมกระเทียม 4~5 กลีบ
10.น้ำมะนาว 1 ช้อนโต๊ะ

วิธีการทำ
1.เทน้ำมันพืชใส่กระทะนำปลาทูมาทอดให้กรอบและแกะเอาก้างออกให้เหลือแต่เนื้อปลาทูแล้วพักไว้
การทำน้ำจิ้มรสเด็ด
1.นำถั่วลิสงมาตำให้ละเอียด
2.ใสน้ำตาลปี๊บแล้วตำเข้าด้วยกัน
3.ใสพริกขี้หนูและกระเทียมตำเข้าด้วยกัน
4.ตักขึ้นจากครกและนำมาใส่ถ้วย
5.ใสน้ำปลาและปรุงรสด้วยน้ำมะนาว ผงชูรส แค่นี้ก็ได้น้ำจิ้มรสเด็ดแล้ว ถ้าต้องการรสไหนเพิ่มก็เพิ่มได้เลยตามใจชอบ
วิธีการรับประทาน
1.นำผักกาดหอมฉีกใบพอเหมาะมือ
2.นำก๋วยเตี๋ยวเส้นใหญ่เด็ดพอเหมาะมาใสในใบผักกาดหอม
3.ใส่เนื้อปลาทูขนาดพอคำ
4.ใสน้ำจิ้มรสเด็ดลงไปแล้วห่อใส่ปากได้เลยจะได้รสชาดความอร่อยของเมี่ยงปลาทูแล้วต้องรับประทาน 4~5 ท่าน

Central Thai Food


The Central region also has what is termed Royal Cuisine, a more sophisticated version of regional cuisine. Influenced by the kitchens of the Royal Court, dishes are elaborately prepared, making it as much an art form as a culinary masterpiece. As the largest agricultural area in the country, rice is an essential element of every meal. Various kinds of curries are used to bring a splash of variety to Central Thai food.

Central Thai food includes dishes such as Kaeng Phet, or curry, which is eaten with rice; Tom Yum, the most frequently ordered dish all over Bangkok, which is mixed with kung (shrimp), fish and chicken and is flavoured with lemon grass, chillies and kaffir lime leaves; Kaeng Khieo Wan, a spicy green curry with ingredients comprised of coconut milk, sweet basil and chillies;

Tom Kha Gai, a thick coconut milk curry made with chicken or meat with lemon grass; Kaeng Som, a spicy sour soup with fresh vegetables, shrimps or fish; Kaeng Liang, a traditional herbal, mild and spicy soup with vegetables; Phat Phak, or fried vegetables with oyster sauce, and Phat Prieo Wan, sweet and sour versions, are best known to complement rice and curry; Yum, a spicy salad dish full of torpedo-shaped chillies, which is quite popular and often ordered with a pre-dinner drink; and Nam Phrik, the most original Thai dish of all, which offers an array of different versions, all incredibly pungent to a foreign nose.

Northern Thai Food


Most dishes in Northern Thai food are milder than those of others regions and patterned by Burmese influence. Rice is always the main dish, with curries being secondary to the meal; but the northern people prefer Khao Nieo (Sticky rice), a steamed glutinous rice, kneaded into small balls and used to soak up sauces and dips.

Northern Thai food also includes dishes such as kaeng Hang Le, a spicy pork curry that relies on ginger, tamarind, and turmeric; Khao Soi, a mix of eggnoodles and meat that also originated in Burma, which is heavily laced with coconut cream, and served with spring onions, pickled cabbage and slices of lime; Nam Phrik Ong, another delectable accompaniment, a northern-style chilli-dip served with dried shredded pork and freshly cooked vegetables; and Miang (tea leaves) another Burmese item that is eaten as an hors d'oeuvre.

The exclusive method for serving Northern Thai food is on a Khan Toke (small circular table). It is normally set up in lavish surroundings. Diners sit on the floor around the table and help themselves to assorted dishes; perhaps a minced meat dish seasoned with chilli, a salad, and numerous sauces. Thus, eating Northern Thai food is a very communal affair.

North-eastern Thai Food


North-eastern Thai food reflects the influence of neighbouring Lao in a number of dishes. Glutinous rice is the staple diet, and all food is highly seasoned. This is supplemented by a heady mixture of strong bitterness and saltiness, creating an excitingly forthright taste locally known as saeb. Som Tam (green papaya salad), is one of north-eastern Thailand's favourite dishes that has became popular nation-wide, and even in Thai restaurants overseas.

Amongst the many dishes that make up North-eastern Thai food. Som Tam (green papaya salad) has become a favourite and is popular nation-wide as well as in restaurants around the world.

Som Tam is a spicy salad made from raw papaya, dried shrimp, crab, lime juice, garlic and chillies. For the genuine Isan version, Pla Ra, fermented fish, is also added to the dish. Lap (other popular North-eastern Thai food dishes include), North-eastern Thai food minced meat, chicken or pork, cooked in heavily seasoned dried chillies, lime juice and fish sauce; Nam Tok, medium rare barbecued meat cooked with spicy sauces, lime juice, fish sauce and dried chillies; and Kai Yang or grilled chicken, another North-eastern Thai food dish that is always ordered after the formula of Lap, Nam Tok and Som Tam. Bathed with herbs and sauces, it is eaten with a sweet sauce used as a dip.

Southern Thai Food

Southern Thai food has some unique ingredients and dishes. The most notable is the large tree-grown bean known as Sato, a bit like garlic because everyone knows when you’ve been eating it! Kaeng Tai Pla, quite famous among southern curries is cooked from fish kidneys with added vegetables; Kaeng Luang, is a yellow curry with fish and bamboo-shoots.

If you have a delicate palate, approach this dish with extreme care; Muslim dishes are, of course, common in this strongly Islamic region. Southern Thai food of this nature can be seen in many dishes. Khao Mok Kai, exhibits strong Middle Eastern influences with its saffron rice and marinated chicken; Kuai Tieo Khaek, noodle curry, inspires thoughts of India, though it is believed to have originated in the Malay peninsula.
